750ml bottle red wine zest of 1 orange, in strips 2 cinnamon sticks 8 whole cardamom pods 8 cloves 6 slices peeled fresh ginger 80g sugar 250ml port 250ml rum, cognac or aquavit
Pour the red wine into a large pan. Add the orange zest, all the spices, the sugar and 500ml water, then bring to a simmer over a medium heat. Simmer gently for 30 minutes, then stir in the port and the rum, cognac or aquavit. Ladle into heatproof glasses.
