Mountain, desert, ocean or jungle… which are you? Jungle. First great travel experience? Going to the Serengeti in Tanzania with my dad when I was 11. We’d camp every night and only have a shower when we found a waterfall. I spent my 12th birthday camping inside the Ngorongoro Crater. Favourite journey? A week-long trip canoeing down the Zambezi River at Mana Pools NP in Zimbabwe. It’s a fantastic place that’s booming with wildlife – it’s like you’ve gone back 500 years. Top five places worldwide? Pantanal, Brazil; Antarctica; Mana Pools NP, Zimbabwe; Sabi Sands GR, South Africa; and anywhere animals get the respect they deserve. Passport stamp you’re proudest of? Qinling, China. I saw giant pandas in the wild there. Passport stamp you’d most like to have? Hemis National Park, India, in the Himalayas. It must be fantastic to see snow leopards in the wild. Guilty travel pleasure? Not having to exercise. When on safari, it’s very hard to find a place to safely go running outside.

Husband and wife team Katie and Giancarlo Caldesi love Italian food, owning two restaurant­s and a cookery school. Their new book, Sicily, explores the isle’s cuisine and one of its best-loved snacks, arancini (p14).

G: Taking a steam train by myself when I was nine to another town an hour from my home in Tuscany. K: Normandy with my parents on our annual holiday, and eating delicious French food. Favourite journey? G: Going home to Tuscany to visit my parents via plane, train and walking as they had no car. K: Flying first class for the first time on my honeymoon to the Caribbean island of Mustique. It was amazing! Top five places worldwide? G: New York City, USA; Venice & Naples, Italy; London, UK; Paris, France. K: New York City, USA; New Delhi, India; Bologna, Tuscany and Venice, Italy. Passport stamp you’re proudest of? Both: Peru! Passport stamp you’d most like to have? Both: New Zealand. Guilty travel pleasure? Both: To be able to travel first class with flat beds and fizz!

Most photograph­ers will tell you that sunset and sunrise are the ‘golden hours’. But snapper Mark Bauer proves you shouldn’t dismiss midday for capturing the perfect scene. Just make sure that you have the patience to wait for the right moment to come along – see page 66.

Favourite journey? A snowmobile trip in Greenland to go and photograph the northern lights display. Top five places worldwide? Jurassic Coast, England (I know it’s where I live but it’s stunning); the ice beach in Jokulsarlo­n, Iceland; San Francisco, USA; Lake Como, Italy; and northern Portugal. Passport stamp you’re proudest of? Greenland. Passport stamp you’d most like to have? There are so many places but probably Chile. Guilty travel pleasure? I wouldn’t describe this as a ‘pleasure’ but I do have a habit of nicking the shower caps from hotel bathrooms. They make excellent rain covers for my camera when I’m shooting in bad weather!
