MasterChef: The Profession­als BBC One, Tuesday

In the first heat, four profession­al chefs from around the country face three challenges to earn a place in this week's quarter final. After the initial test of basic kitchen skills, they must prepare tortellini stuffed with Mushroom Duxelles and served with a sauce of their choice in just 25 minutes. For the final round, they must recreate Marcus Wareing's recipe for devilled butterflie­d mackerel with herbflavou­red mayo and a cucumber and fennel salad.
