Southern Fried Chicken Burger

SOUTHERN fried chicken is quite easy to make once you know the knack.

Ingredient­s

Serves 4

4 Chicken Breast escalopes 250g Self Raising Flour 1 tbsp Salt

1 tsp Cumin Powder

1 tsp Turmeric

1 tsp Coarse ground black pepper

2 tsp Dried Oregano

1 tsp Garlic powder

1 tsp Fennel Seeds

2-3 Eggs

4 White soft buns

4 Cheese Slices (optional) Finely sliced iceberg lettuce Mayonnaise Sunflower oil

Method

The chicken breast should be no more than one centimetre thick which allows the chicken to cook in the same time as the batter takes to go crispy and golden.

Mix the flour with the salt and spices in a large bowl. In another bowl beat the eggs together.

Heat the oil in a frying pan to about 160ºC.

If the oil is too hot the batter will burn before the chicken is cooked .

You will need a depth of at least 1 inch of oil.

Dip the chicken in the flour mix until completely covered.

Shake off any excess and dip in the egg mix until well covered and again allow excess egg to drip off.

Dip back in the flour again and then into the hot oil. Cook two at a time otherwise the oil temperatur­e will drop too much.

When the chicken has cooked through transfer to the buns with garnish and leave for a couple of minutes to allow the cheese to melt and the chicken to cool slightly before serving.
