THE BASE FOR EACH IS THE SAME:
150G DIGESTIVE BISCUITS 75G BUTTER
1 SIMPLY WHIZZ UP THE BISCUITS IN A BLENDER, MIX IN THE BUTTER THEN PRESS INTO A 18-20CM PIE TIN, BRINGING THE MIXTURE UP THE SIDES.
2 LEAVE IN THE FRIDGE WHILE YOU MAKE THE FILLING. EACH PIE WILL SERVE 8-10.
Chocolate, hazelnut and salted caramel

250G CHOCOLATE ICE CREAM, SOFTENED 250G SALTED CARAMEL ICE CREAM, SOFTENED
60G CREAM CHEESE
50G TOASTED HAZELNUTS
60G SALTED CARAMEL SAUCE
25G DARK CHOCOLATE, MELTED
1 MIX THE ICE CREAMS AND CREAM CHEESE TOGETHER. ROUGHLY CHOP THE HAZELNUTS AND ADD HALF TO THE ICE CREAM, TOGETHER WITH HALF THE CARAMEL SAUCE. SPOON ONTO THE BASE.
2 DRIZZLE OVER THE CHOCOLATE AND THE REMAINING CARAMEL SAUCE. SCATTER OVER THE REMAINING HAZELNUTS.
3 PUT INTO THE FREEZER TO SET. TAKE IT OUT 15 MINS BEFORE SERVING.
Strawberry and pistachio

250G COCONUT AND LIME ICE CREAM, SOFTENED
50G CREAM CHEESE
50G TOASTED PISTACHIOS, CHOPPED 250G STRAWBERRY SORBET
250G STRAWBERRY ICE CREAM, SOFTENED
1 MIX TOGETHER THE COCONUT ICE CREAM, CREAM CHEESE AND HALF THE PISTACHIOS. SPOON ONTO THE BASE AND LEVEL WITH A SPOON. PUT INTO THE FREEZER.
2 ONCE IT’S FROZEN, MIX THE STRAWBERRY SORBET AND STRAWBERRY ICE CREAM TOGETHER. 3 PUT ONTO THE COCONUT BASE. SCATTER OVER THE REMAINING PISTACHIOS. PUT
INTO THE FREEZER. TAKE IT OUT 15 MINS BEFORE SERVING.
Blueberry and vanilla
EASY/PREPARE AHEAD/ FREEZE • READY IN 45 MINS, PLUS FREEZING • SERVES 8-10
ZEST AND JUICE OF 1 LEMON
100G FROZEN BLUEBERRIES
500G VANILLA ICE CREAM, SOFTENED 100G SOFT CURD CHEESE 2TSP VANILLA EXTRACT
EXTRA FRESH BLUEBERRIES, TO SERVE
1 FIRST MAKE THE BLUEBERRY SAUCE.
PUT THE LEMON ZEST AND JUICE AND BLUEBERRIES INTO A SAUCEPAN AND
HEAT UNTIL THE BLUEBERRIES ARE SOFT.
2 WHIZZ WITH A HAND BLENDER TO MAKE A PURÉE, THEN PUSH THROUGH A SIEVE. ALLOW IT TO COOL COMPLETELY.
3 MIX THE ICE CREAM, CURD CHEESE AND VANILLA EXTRACT. SPOON ONTO THE BASE AND SWIRL THROUGH THE BLUEBERRY PURÉE. TOP WITH THE BLUEBERRIES AND FREEZE. TAKE IT OUT 15 MINS BEFORE SERVING. W&H
