450G STRAWBERRI­ES, HULLED 150G CASTER SUGAR

1TBSP RICH BALSAMIC VINEGAR (BELAZU IS GOOD)

150ML DOUBLE CREAM 1 WHIZZ THE STRAWBERRI­ES AND SUGAR IN A BLENDER TO FORM A PURÉE, THEN STIR IN THE BALSAMIC VINEGAR AND CHILL FOR 30 MINUTES.

2 STIR IN THE CREAM THEN CHURN IN AN ICE CREAM MAKER UNTIL NEARLY FROZEN, BEFORE FREEZING OVERNIGHT. REMOVE FROM THE FREEZER 10 MINUTES BEFORE SERVING.
