1 FREE-RANGE EGG, BEATEN
1TSP CHILLI POWDER
2TSP CHIPOTLE PASTE
2TSP TOMATO PURÉE
400G CAN KIDNEY BEANS, DRAINED, RINSED AND CRUSHED WITH A MASHER FOR THE GUACAMOLE
2 AVOCADOS
½ RED ONION, FINELY CHOPPED 2 TOMATOES, DESEEDED AND CHOPPED A SMALL BUNCH OF CORIANDER, CHOPPED JUICE OF 1 LIME
A DASH OF TABASCO SAUCE
TOASTED BURGER BUNS AND BABY GEM LETTUCE LEAVES, TO SERVE
1 MAKE THE BURGERS. COOK THE ONION IN A LITTLE OIL UNTIL SOFT. PUT INTO A BOWL AND MIX WITH THE REST OF THE BURGER INGREDIENTS. FORM INTO 4 BURGERS AND PLACE, COVERED IN THE FRIDGE, WHILE YOU MAKE THE GUACAMOLE. 2 MASH THE AVOCADOS, THEN ADD THE REST OF THE INGREDIENTS. SEASON, THEN COVER WITH CLINGFILM. COOK THE BURGERS ON THE BARBECUE OR IN A FRYING PAN, THEN POP
INTO A HOT OVEN (180C, GAS 4) FOR AROUND 15 MINS OR UNTIL COOKED THROUGH.
