500G CHERRY TOMATOES, HALVED
2 X 125G PACKS OF BUFFALO MOZZARELLA, ROUGHLY TORN A HANDFUL OF FRESH BASIL LEAVES, ROUGHLY TORN
FOR THE DRESSING
1 GARLIC CLOVE, CRUSHED 1TBSP BALSAMIC VINEGAR 1TSP CASTER SUGAR 3TBSP EXTRA VIRGIN OLIVE OIL
1 PUT THE CHERRY TOMATOES, MOZZARELLA AND BASIL LEAVES IN A LARGE BOWL
AND STIR WELL TO COMBINE.
2 IN A SEPARATE BOWL, MIX THE DRESSING INGREDIENTS TOGETHER AND POUR OVER THE SALAD. SEASON WELL WITH SALT AND FRESHLY GROUND BLACK PEPPER
