Classic salmon bagel

1 NEW YORK BAKERY CO. PLAIN BAGEL, SLICED IN HALF
2TBSP CRÈME FRAÎCHE
1TBSP CHOPPED DILL
2TSP EXTRA VIRGIN OLIVE OIL
SEA SALT AND BLACK PEPPER
ZEST AND JUICE OF ½ LEMON
1 SMALL GARLIC CLOVE
150G SMOKED SALMON
½ SMALL BEETROOT, GRATED
1½TBSP CAPERS
1 IN A SMALL BOWL MIX TOGETHER THE CRÈME FRAÎCHE, HALF THE CHOPPED DILL, 1TSP OLIVE OIL, SALT, PEPPER AND HALF THE LEMON ZEST AND JUICE.
2 TOAST THE BAGEL HALVES AND, WHEN GOLDEN, GENTLY RUB THE GARLIC CLOVE OVER BOTH SIDES ONCE – ANY MORE THAN THAT AND THE GARLIC CAN BECOME OVERPOWERING.
3 DRIZZLE THE LEFTOVER OLIVE OIL OVER THE BAGEL HALVES, DIVIDE THE SMOKED SALMON ON TOP, SCATTER OVER THE GRATED BEETROOT AND SPOON OVER THE LEMON CRÈME FRAÎCHE.
4 FINISH OFF BY SPRINKLING OVER THE CAPERS, THE REMAINING DILL, MORE PEPPER AND A LAST SQUEEZE OF LEMON JUICE. EAT STRAIGHT AWAY!
