Gorgonzola burgers

Makes 4 large burgers

You will need

Olive oil, for frying 1 onion, finely sliced 1 garlic clove, finely sliced

500g Aberdeen Angus beef mince 1 egg, beaten 1tsp Dijon mustard 1tsp roughly chopped thyme leaves

100g Gorgonzola, roughly cut into small cubes Flour, for dusting Salt and freshly ground black pepper

4 burger buns or brioche buns

Lettuce, tomato and mayonnaise, to serve

How to do it

1 Heat the olive oil in a pan on a low heat and fry the onion for 5 mins. Add the garlic to the pan and fry for a further 5 mins. 2 Put the beef mince into a mixing bowl and tip in the fried onions and garlic, beaten egg, mustard, thyme leaves and salt and black pepper to taste.

3 Add the Gorgonzola cubes to the beef and, using your hands, combine all the ingredient­s – make sure the cubes are evenly distribute­d by pressing them firmly through the mince. Divide the mixture into 4 and roll each one into a ball. Put each ball on a lightly floured surface and press down firmly into a burger shape. Press around the edges to ensure that they are the same thickness all the way through. Cover the burgers and refrigerat­e for at least 30 mins. 4 Heat a little oil in a frying pan and fry the burgers for 5 mins on each side, or until the fat runs clear and the burgers are cooked through. Leave to rest before serving on a brioche burger bun with the lettuce, tomato and mayonnaise.
