Stuffed peppers

Grated Red cheddar and

mozzarella, 250g, Tesco

Brush four halved peppers with olive oil. Grill, cut side down, for 5 mins. Turn and grill for 5 mins more. Meanwhile melt 15g butter in a pan and cook 1 finely sliced courgette until golden. Add 110g couscous and cook for 1 min. Add 200ml boiling water, stir and remove from the heat. Cover and leave to stand for 5 mins. Stir 85g tomatoes, chopped, and 3tbsp chopped basil into the couscous and use this mixture to fill the peppers. Top each with a hearty sprinkling of cheese. Grill until melted.
