Tortilla Wedges With Party Guacamole

Tequila adds a subtle kick to this creamy dip – give it a shot!

ServeS 4-6 AS A SnACk 12 mini tortillas or flatbreads 3tbsp olive oil

For the guACAMole: 4 avocados

4 spring onions, finely sliced 90g (3oz) cream cheese 1tbsp tequila (optional) 1 clove garlic

Juice and zest of 1 lime

2 red chillis, finely sliced (optional)

Fresh coriander (optional)

lime wedges, to serve

Heat oven to 200C/Gas

6. Cut the flatbreads into quarters, spread on a baking tray, drizzle over the olive oil and sprinkle with sea salt, then toss to coat evenly. Bake for 15-18 min, until crisp and golden.

Make the guacamole: Mash 2

the avocados with the spring onions, cream cheese, tequila, if using, garlic and lime juice and zest, to a rough texture. Serve the crispy tortillas with the guacamole, garnished with sliced red chillis and coriander, if using, with lime wedges on the side .
