If you’re ‘not a salad person’, I think this combinatio­n might change your mind (and taste buds). I’ve converted many an avid salad-hater with this alliance of flavours. It’s important to choose your figs wisely as they don’t ripen after picking, so make sure you buy fruit with a deep purple colour and an unbroken skin.

INGREDIENT­S

1 chicken breast, grilled • 40g baby spinach • 20g rocket • 5 pecan nuts • 1 fresh fig, sliced • 50g low-fat feta, crumbled

For the dressing: juice of ½ lemon • ½ tsp honey • 1 tbsp olive oil

METHOD

1. First step’s easy: slice the grilled chicken into strips and set aside.

2. Toss the salad leaves, nuts, fig and feta in a large bowl.

3. Make the dressing by stirring the ingredient­s together in a small dish. Add the chicken strips to the salad, then pour the dressing over. Good food ought to be way more complicate­d than this.
