Full disclosure: there are some things we at Women’s Health don’t know. As schooled as we are in geopolitic­al affairs, we don’t have a direct line to the Brexit talks. And after endless hours of stalking Caroline Flack on Instagram, we still don’t know who we’ll be backing to win Love Island come summer. But we do know that, while you’re keeping one eye on Brussels and another on the villa this year, you’ll be tucking into a sorghum salad topped with watermelon seeds. Clever, eh? And not a crystal ball in sight. While some food trends get chewed up and spat out quicker than you can say ‘edible flowers’, others turn the wellness world green indefinite­ly – we’re looking at you, avocado toast. But how do some foods manage to go from niche ingredient to hashtag elite? ‘The speed at which food trends emerge, spread and finally cross over into the mainstream is quite staggering,’ says Emma Clifford, senior food and drink analyst at Mintel. ‘Trends take on a life of their own on social media. It’s an ideal platform for food companies to look at to identify new ones.’ Rest assured, science does play a part, too. We have a glut of gut health research to thank for kombucha and blame for sauerkraut. So think of us less like Mystic Meg, more like Michael Fish, and read the WH forecast of the foods you’re going to be bulk-buying, ordering and double-tapping in 2018.
