Low-fat and high-protein, prawns are a muscle-building dream. Plus, they’re high in selenium – proven to fight ageing and disease. So don’t skimp on shrimp

INGREDIENT­S 1 tsp finely chopped dill, plus extra to garnish • 2 tsp cream cheese • 1 tsp crème fraîche • zest and juice of 1 lemon • pepper • 1 tsp butter • 1 slice of sourdough bread • 2 leaves of baby gem lettuce • 80g cooked prawns

METHOD 1. To make the dressing, combine the chopped dill, cream cheese and crème fraîche with half the lemon juice and season with pepper. 2. Butter the bread and lay the baby gem leaves on top. 3. Spoon the dressing on to the lettuce and load up with prawns. Then garnish with lemon zest and dill. Season with pepper and serve. Easy-peasy.
