PROTEIN-RICH • HIGH IN FIBRE • FREEZER-FRIENDLY
INGREDIENTS
675g white spelt flour • 2 tsp baking powder • ½ tsp pink Himalayan salt • ½ tsp dried mixed herbs • 2 tbsp extra virgin olive oil • 250ml water
METHOD
1. Preheat the oven to 220°C and line two large oven trays with baking paper.
2. Sift the flour, then combine it with the baking powder, salt and herbs in a large bowl. Add the oil and the water and mix well.
3. Turn the dough out on to a lightly floured surface and knead until it comes together and looks smooth.
4. Divide the dough into four and roll out each portion into a 20cm circle. Place on trays and top with whatever you like – I like to top them with plenty of plant-based foods, a little lean protein and some cashew cheese or a low-fat cheese, such as ricotta.
5. Bake the pizzas for 18 mins or until crisp and golden. Pizza cake.
