WHITE BEAN AND TUNA SALAD

3 x 120g (4oz) tins tuna in spring water, drained and flaked 400g (14oz) can cannellini beans, drained and rinsed 200g (7oz) cherry tomatoes 1 red onion, finely sliced 1 small cucumber, chopped 60g (2½oz) baby spinach Small bunch parsley leaves, picked 1 tbsp pumpkin seeds
For the dressing:
1 tbsp balsamic vinegar 1 tbsp light mayonnaise 1 tbsp lemon juice 2 tsp wholegrain mustard
1. Combine the tuna, beans, tomatoes, onion, cucumber, spinach and parsley in a large bowl. 2. Whisk together the dressing ingredients and season. 3. Pour the dressing over the salad and toss gently. Serve sprinkled with the pumpkin seeds.
