SALMON CARPACCIO

18 green olives, pitted and roughly chopped

6 anchovy fillets, chopped

1 tsp salted capers, rinsed and dried

1 tsp finely chopped oregano

1 tsp red wine vinegar

2 tbsp olive oil

2 slices of Italian bread, such as ciabatta

1 garlic clove, finely chopped juice of 1 lemon

300g (10½oz) smoked salmon

1. Preheat the oven to 180ºC/350ºF/Gas Mark 4. Mix together the olives, anchovies, capers, oregano, vinegar and 1 tbsp of olive oil.

2. Cut the bread into small cubes and toss with the garlic and a splash of the olive oil. Mix to coat then arrange on a baking dish and bake for 2 mins on each side, until crispy.

3. Arrange the salmon on four plates and drizzle with lemon juice and the remaining olive oil.

4. Top with the caper and olive mixture and scatter over the bread. Season with salt and pepper and serve.
