Orange Blossom Poached Fruits
SERVES: 6 PREP: 12 MINS COOK: 15 MINS
200g (7oz) caster sugar
2 tbsp orange blossom water
350ml (12fl oz) water
1 vanilla bean, split, seeds scraped
3 peaches, halved, stones removed
3 mangos, cheeks only, peeled
125g (4½oz) raspberries
125g (4½oz) blueberries
500g (1lb 2oz) Greek yogurt
1. Place sugar, orange blossom water, water, vanilla bean and half the vanilla seeds in a saucepan over a medium heat. stir with a metal spoon. Bring to the boil and bubble rapidly (don’t stir any more) for 15 mins.
2. Remove the syrup from the heat and pour over the fruit. Let cool, then cover and refrigerate, turning the fruit in syrup once or twice.
3. Place the rest of the vanilla seeds in a bowl with yogurt and combine. Place in a second airtight container and refrigerate until require.
4. To serve, place fruits and syrup in bowls and serve with yogurt.
