HONEY & WALNUT ICE-CREAM SANDWICHES
MAKES: APPROX 18 SANDWICHES PREP: 20 MINS COOK: 12 MINS
175g (6oz) California walnut pieces, toasted
115g (4oz) unsalted butter, at room temperature 100g (4oz) sugar
175g (6oz) honey
1 egg
245g (9oz) flour
½ tsp baking soda
½ tsp cinnamon
½ tsp nutmeg Pinch of salt
½ cup dark chocolate chips Ice cream of your choice 1. Toast the walnuts for about one or two minutes in a large, dry pan over a medium-high heat until lightly brown. Set aside and allow to cool. 2. Preheat the oven to 1800C/3500F/Gas Mark 4. 3. In a bowl, cream the butter and sugar together with a hand mixer for 2 mins. Add the honey and egg and beat to incorporate. 4. Sift together the flour, baking soda, cinnamon, nutmeg and salt. Add the flour mixture to the wet ingredients and stir to combine. Mix in the walnut pieces and chocolate chips. 5. Place 1 tsp portions of cookie dough 2in apart on a parchment-lined baking sheet and bake for 10 to 12 mins or until the edges are light, golden brown. Set aside to cool.
6. Place a scoop of icecream on the bottom of one cookie, then gently top the ice-cream with a second cookie. Repeat this process with the remaining cookies and ice cream. Serve immediately or wrap individually in plastic wrap and place in the freezer.
