Immediate Closure

Observed during the time of the inspection, dead and live cockroache­s throughout the facility including under the counter by the reachin coolers and behind the broken tiles. The facility is closed for an imminent health hazard until corrected on site. Instructed the person in charge (PIC) that the facility must correct all violations including the infestatio­n of cockroache­s before a reinspecti­on is performed to assure compliance. Observed at the time of the inspection, no sanitizer bucket or spray bottle. Violations corrected on site by the PIC providing a sanitizer bucket. Observed at the time of the inspection the sanitizer cloth stored outside the sanitizer bucket between uses. Corrected on site by storing the sanitizer cloth in the sanitizer bucket. Downgrade

Observed several food items including pork without covers in the walk-in cooler at the time of inspection. Instructed the PIC that all food must be covered unless the food is in the process of cooling. Instructed the PIC to cover the food in the walk-in cooler. Observed employee wiping an in-use knife with sanitizer wiping cloth stored outside the sanitizer bucket at the time of inspection. Instructed the PIC that the employee sanitizer wiping cloth cannot be used to wipe in-use utensils. In-use utensils must be either replaced with a clean utensil or washed, rinsed and sanitized in between uses. Observed several containers of cooked food items in the walk-in cooler such as pork, chicken , beef and beans with no date marking. Instructed the PIC that all cooked foods in the reach-in cooler and walk-in cooler should have date marks not to exceed seven days. Observed employee personal medication stored next to single-service items in the kitchen food prep area at the time of inspection. Instructed the PIC to train employees about personal medication. Food code medicines that are in a food establishm­ent for the employees’ use shall be labeled and located to prevent the contaminat­ion of food, equipment, utensils, linens, and single-service and singleuse articles.
