Ironwood Kitchen LLC, 5740 Night Whisper Rd. NW (Oct. 19) Downgrade

Observed repeat violation of cooked bacon stored on top of raw egg crates in the kitchen at the time of inspection. Violation corrected on-site by removing bacon to a clean storage container. Observed food stored on the floor of walk-in cooler such as bacon, and canned food stored on the floor of dry storage area. Instructed the person in charge (PIC) that all food must be stored at least six inches off the ground. Observed food contact ware or surfaces which were not being effectivel­y cleaned and sanitized at the time of inspection. Observed can opener blade with food debris build up. Instructed the PIC to clean and sanitize blade on a daily basis. Observed ice machine with debris on bottom of bin. Instructed the PIC to remove ice then clean and sanitize ice machine immediatel­y. Observed items holding above 41° Fahrenheit at the time of inspection. Observed red chile at 51 ° stored in the walk-in cooler. Violation corrected on-site by discarding red chile and discussion with the PIC regarding proper procedures for cold holding. Observed items not labeled or dated at the time of inspection. Observed several items such as but not limited to, diced potatoes, beans, and green chile. Violations corrected on-site by date marking all processed items and discussion with the PIC regarding proper procedures for date marking. Downgrade

Observed many dead roaches in the dry storage area at time of inspection. Instructed the PIC to remove dead roaches from facility. Observed chicken in reach-in covered temping at 57° at time of inspection. Instructed the PIC that cooling must be done properly in order. Provided a safety check list with cooling procedures. Violation corrected on-site by discarding chicken. Observed pork wrapped in wrap in prep line cooler temping at 91°, cooked noodles temping at 67°, beef temping at 53° at time of inspection. Violations corrected on-site by discarding all the mentioned foods. Observed foods in reachin such as chicken, pork, veggies without proper date marking at time of inspection. Instructed the PIC to date mark all foods in order to prevent serving expired foods. Observed Chlorine sanitizer strip turning black which indicates its above 200 ppm Chlorine at time of inspection. Instructed the PIC to remake and use strips to test sanitizer at all times in order to prevent cross contaminat­ion. Observed ground beef thawing at room temperatur­e at time of inspection. Instructed the PIC that thawing must be done in cooler or under running cold water. Observed not all thermomete­rs in coolers in working order at time of inspection. Instructed the PIC to replace them. Observed food stored in containers such as flour without common name of food on container. Instructed the PIC to label all foods that are removed from their original container. Instructed the PIC to keep all foods covered in order to prevent cross contaminat­ion from the environmen­t. Observed severe debris throughout the facility including grease build up behind grill/stove area and under and behind equipment at time of inspection. Instructed the PIC to clean and remove old grease build up.
