Angel Fire Wine & Wagyu features gourmet cooking

Food and wine make for a good time, especially in the scenic setting of Angel Fire Resort.

The resort is hosting its third annual Wine & Wagyu, which commences with a finedining experience at 10,000 feet on Thursday, Aug. 15.

Guests will ride the chairlift from the base of Angel Fire from 4:45 to 5 p.m. and be taken to the Summit House for a seated dinner hosted by executive chef Paul Voboril. The intimate dinner is limited to about 30 people. Attendees will be shuttled back down to the base after the dinner. The four-course dinner features Wagyu beef from Texas-based A Bar N Ranch. The menu includes braised short rib vol-au-vent; a wagyu sirloin and peach salad; a main course of a beef tenderloin with haricot green beans and caramelize­d shallots, potatoes anna, and a wild mushroom demi; ending with a chocolate mousse with Grand Marnier berries.

“It’s a nice, low-key, beautiful evening,” said Greg Ralph, director of marketing at Angel Fire Resort. “There will be music up there provided by Music from Angel Fire. It’s classy, it’s beautiful and it’s pretty

private. You’re going to feel like you own the place and you’re sitting up there looking over the valley, over Wheeler Peak. It’s a beautiful way to start the weekend.”

Two-step the night away during the Boots Boogie & BBQ and Silent Auction on Aug. 16 at the Angel Fire Resort Country Club. Nashville’s Donnie Lee Strickland will perform. Proceeds from the silent auction benefit Music From Angel Fire. One of the auction items is an appearance on KRQE chief meteorolog­ist Mark Ronchetti’s reality show “Mark vs the Mountain.”

A full day of events are scheduled for Aug. 17 at Frontier Park, at the base of Angel Fire Resort.

“It’s a great place to be,” Ralph said. “There will be a cooking demo there where you get to hang out with chef Al Havens, and then a wine seminar starts right after that. And then in the early afternoon, you’ve got a cooking demo with chef Ray Naranjo, also at Frontier Park. And then, from 3 to 6 p.m. is the grand tasting, where all the good wines are broken out and explained to you and you get to go around and taste various varietals, learn about them and have some delicious food featuring wagyu beef.”

Enjoy Sunday Funday with bloody marys and mimosas during the Bloody Good Bacon Brunch on Aug. 18 at Angel Fire Country Club.

“Sunday morning is one of my favorite things,” Ralph said. “One of the products that they produce from the wagyu beef is a beef bacon. Wagyu beef has a different marbling. It’s more marbled than regular beef. That’s a little softer, and it’s a healthier form of beef.”
