Jade Chinese Restaurant, 8001 Wyoming Blvd. NE (Jan. 8) Downgrade

Observed container of flour or powdered sugar without the proper cover at time of inspection. Violation addressed by discussing with person in charge (PIC) to use proper cover in order to prevent cross contaminat­ion. Observed food improperly stored, packaged, covered, or lacking protection against contaminat­ion. Observed chicken temping at 46° Fahrenheit in the reach-in cooler at time of the inspection. Violation corrected on-site by discarding all food and discussion with the PIC regarding proper procedures and instructio­ns about discarding food. Observed containers of veggies and chicken and no date marking at time of inspection. Instructed to PIC to date mark all foods in the walk-in cooler in order to prevent from serving expired foods. All date marking not to exceed more than seven days. Observed spray bottle hanging from stove handles without proper identifica­tion at the time of inspection. Violation corrected on-site and told the PIC that all chemicals must be kept separated from food and food contact surfaces. The PIC stated that the bottle was a degreaser. Observed no thermomete­r available for cook line at time of inspection. Violation addressed and instructed the PIC that they are required to have thermomete­r in order to be in compliance and verify food temperatur­es. Observed sugar in large container not properly labeled with common name at time of inspection. Violation corrected on-site. Instructed the PIC to label all containers being used to store food. Observed onions in rear of kitchen near air conditione­r, sink and trash can with box on top of onions and personal fan with debris build up on make line near egg drop soup at time of inspection. Violations addressed with the PIC. Instructed the PIC to keep food separated from non food items in order to prevent cross contaminat­ion from environmen­t. Observed employees not washing hands when leaving make line at time of inspection. Violation addressed with the PIC instructin­g employee when to wash hands in order to prevent cross contaminat­ion. Observed hand sink blocked by large container at time of inspection. Violation addressed on site by discussing proper procedures for hand sinks usage and reminded the PIC that hand washing stations must be available at all times.
