Spice up salmon with everything bagel seasoning

Iwas looking for a simple way to spice up salmon fillets and a bottle of everything bagel seasoning on my spice shelf smiled up at me. The spices are a perfect addition to the rich salmon. It’s more than just for bagels now and is becoming a favorite spice for many different recipes.

By the way, I had some leftover salmon in the fridge, and it tasted great at room temperatur­e the next day. You can make it in advance or make extra for another dinner.

EVERYTHING BAGEL SAVORY SALMON Yield 2 servings

Olive oil spray 2, 6-ounce salmon fillets 2 teaspoons olive oil 1 tablespoon everything bagel seasoning Salt and freshly ground black pepper Heat a medium-size nonstick skillet over medium-high heat and spray with olive oil spray. Add the salmon fillet, skin side up. Cover with a lid and saute 4 minutes. Turn the salmon over and spoon the olive oil over the top. Sprinkle everything bagel seasoning evenly over the salmon. Cover and cook for 2 minutes. When a knife is inserted, the flesh should be opaque, not translucen­t. Do not overcook. A meat thermomete­r should read 155 degrees.

Per serving: 360 calories (49 percent from fat), 19.7 g fat (39 g saturated, 9.2 g monounsatu­rated), 87 mg cholestero­l, 39.2 g protein, 3.5 g carbohydra­tes, no fiber, 470 mg sodium.

CUCUMBER AND BROWN RICE

Yield 2 servings 1 package microwavea­ble brown rice to make 1½-cups cooked 2 teaspoons olive oil ½ cup cucumber, washed and cut into ¼-inch cubes with skin left on Salt and freshly ground black pepper Microwave rice according to package instructio­ns. Measure 1½-cups and save any leftover for another meal. Add oil, cucumber and salt and pepper to taste. Toss well.

Per serving: 230 calories (24 percent from fat), 6.0 g fat (1.0 g saturated, 2.7 g monounsatu­rated), no cholestero­l, 4.3 g protein, 39.4 g carbohydra­tes, 2.6 g fiber, 7 mg sodium.
