ROAST TURKEY BREAST WITH RHUBARB SAUCE

Ingredient­s:

2 cups rhubarb, chopped 3 tablespoon­s sugar 2 tablespoon­s water 1 tablespoon frozen orange-juice

concentrat­e

1/2 teaspoon orange zest

2 pounds turkey breast, uncooked,

skin removed

Directions:

Combine the rhubarb, sugar, water, orange juice and orange zest in a saucepan. Bring to a boil, reduce the heat, cover, and simmer about 5 minutes until tender.

Heat the oven to 375 degrees. Place the turkey breast on a rack in a shallow baking pan, and spread 1/4 cup rhubarb sauce over the turkey.

Roast in the oven for 40 minutes. Spread 1/4 cup additional sauce over the turkey. Continue roasting about 35 minutes or until a meat thermomete­r reads 170 degrees in the thickest portion of turkey breast without touching bone.
