Jefferson County Food & Safety Report

The Arkansas Department of Health regulates the sale of food at establishm­ents that include restaurant­s, bars, day cares, schools, grocery stores, convenienc­e stores, bed and breakfast facilities, hotels/motels, mobile units and concession stands. Inspection­s are made unannounce­d by environmen­tal health specialist­s.

The following are the results of food safety inspection­s conducted by the Jefferson County Health Unit:

■ SUPER 8 MOTEL, 1 Hospitalit­y Lane, White Hall. Date of inspection Jan. 20. Observed dishes being dried on towels in kitchen. After cleaning and sanitizing, equipment and utensils shall be air dried and may not be cloth dried. Breakfast area is not open for customers at this time.

■ CENTRAL FISH MARKET, 324 Walnut St. Date of inspection Jan. 14. Hot water generation and distributi­on systems shall be sufficient to meet the peak hot water demands throughout the RETAIL FOOD ESTABLISHM­ENT. Observatio­n: Observed standing in establishm­ent. Corrective Action: The PHYSICAL FACILITIES shall be maintained in good repair.

■ SEARK FOOD COURT, 1900 S. Hazel St. Date of inspection Jan. 14. Observed opened packages of food being held in refrigerat­or for more than 24 hours with no date marking. Food prepared and held for more than 24 hours shall be clearly marked to indicate the date or day by which the food shall be consumed on the premises, sold, or discarded for a maximum of 7 days. Food was date marked during inspection.

■ SUPER 1 FOODS, 2800 Hazel St. Date of inspection Jan. 8. No soap provided at hand washing sink in produce area. Provide an adequate supply of hand cleanser (liquid, powder, or bar) at each hand washing sink.

■ SUPER 1 FOODS DELI, 2800 Hazel St. Date of inspection Jan. 8. Chicken (45, 48, and 42 degrees F) in prepared food bulk case are out of safe temperatur­e range. Time/ Temperatur­e Control for Safety (TCS) Foods shall be kept cold at a temperatur­e of 41.0°F or below, as measured by an internal probe thermomete­r, to limit bacterial growth. Observed an accumulati­on of dust/ debris on ceiling and ceiling vents near fans. Ceiling and ceiling vents need to be cleaned.

■ BRIGGS BAR B QUE COOKING AND CATERING, 2221 S. Olive St., Ste J. Date of inspection Jan. 8. No signage at hand sink. Post hand washing instructio­ns at hand sink. Hand sink not attached to wall. Secure hand sink to wall. Keep hand sink clean to sight and touch. Did not see thermomete­rs in all food coolers. Keep them visible at all times. Outdoor smokers are not enclosed. Enclose smokers as to ADH Policy. Damp wiping cloths laying about. Rinse in use wiping cloths in a sanitizer solution between tasks. Single service pans are reused. Single service items must not be reused. Equipment in preparatio­n and storage visibly soiled. Keep equipment clean to sight and touch. Men’s room door standing open. Repair door closer. Trash and burn pile outside needs to be cleaned up and kept clean. Observatio­n: Areas of preparatio­n and storage in disrepair. Corrective Action: The PHYSICAL FACILITIES shall be maintained in good repair. Observatio­n: Preparatio­n and storage areas visibly soiled. Corrective Action: Clean the physical facilities as often as necessary to keep them clean. All cooking surfaces are not under Vend hood system. See Arkansas Dept. of Labor for Vent Hood Regulation­s. Observatio­n: USA FOOD Program shows, “business has expired license.” Corrective Action: It is unlawful to operate a retail food establishm­ent without a valid permit. Contact the billing office at 501-661-2171 to ensure that you are in compliance with the law.
