Jefferson County Food & Safety Report
The Arkansas Department of Health regulates the sale of food at establishments that include restaurants, bars, day cares, schools, grocery stores, convenience stores, bed and breakfast facilities, hotels/motels, mobile units and concession stands. Inspections are made unannounced by environmental health specialists.

Recent reports include:
■ SONIC DRIVE IN - WHITE HALL, 8601 Dollarway Road, White Hall. Date of inspection March 2. Observed food in containers in the reach in refrigerator and freezer in kitchen are not being kept covered. Except during cooling, food shall be stored in packages, covered containers, or wrappers. Lids were placed on containers of food during inspection. Observed trash cans containing food residue not being covered when not in continuous use. Trash cans containing food residue should be covered when not in continuous use. Floors in establishment, especially in kitchen area and in walk in freezer, are unclean and need to be cleaned.
■ HUDDLE HOUSE, 7735 Sheridan Road, White Hall. Date of inspection Feb. 25. Observed raw meat above precooked food in stand up freezer. Separate raw animal foods during storage, preparation, holding, and display from ready-to-eat food. Raw meat was moved to the bottom of the cooler during inspection. Observed cook using single use gloves to open a raw steak from wrap and place on the grill and not change their gloves out before continuing to cook and touch utensils on the grill. Single use gloves shall be used for only one task and no other purpose and discarded when damaged or soiled, or when interruptions occur in the operation. Stand up cooler next to stand up refrigerator is not sealing properly. Stand up cooler seals should be repaired to properly seal door. Counter tops, inside of refrigerators, and outside of grill area in kitchen are unclean and need to be cleaned. Nonfood contact surfaces shall be kept free of an accumulation of dust, dirt, food residue, and other debris. Observed several damaged ceiling tiles in establishment. The PHYSICAL FACILITIES shall be maintained in good repair. Floors in kitchen area and walls by three compartment sinks are unclean and need to be cleaned. Clean the physical facilities as often as necessary to keep them clean.
■ HUDDLE HOUSE, 7735 Sheridan Road, White Hall. Date of inspection into complaint Feb. 25. Outside of grill area is unclean and needs to be cleaned. Nonfood contact surfaces shall be kept free of an accumulation of dust, dirt, food residue, and other debris.
■ KIM’S, 204 S. Main St., Altheimer. Date of inspection Feb. 25. Observation: Observe no test to the concentration of sanitizing solution. Corrective Action: Test strips must be available and used to test the strength of chemical sanitizing solutions. Observation: Permit is expired. Corrective Action: It is unlawful to operate a retail food establishment without a valid permit. Contact the billing office at 501-661-2171 to ensure that you are in compliance with the law.
■ FAST MART, 2504 S. Cherry St. Date of inspection Feb. 10. Ice in ice bags packaged in store are not labeled and should have store identifying information on them. Mop sink nozzle is missing and needs to be replaced. Three compartment sink is visibly unclean and needs to be cleaned. No test strips observed in establishment during inspection. Test strips need to test sanitizer strength.
■ WALGREEN’S, 2503 W. 28th Ave. Date of inspection Feb. 10. Observation: The women’s restroom needs a lid on trash can.
■ DOLLAR GENERAL STORE, 2110 Ridgway Road. Date of inspection Feb. 9. Observed food items stored directly on the floor. Food must be stored six inches above the floor to be in compliance with established regulations. Food items was removed from floor during time inspection.
