The Arkansas Department of Health regulates the sale of food at establishm­ents that include restaurant­s, bars, day cares, schools, grocery stores, convenienc­e stores, bed and breakfast facilities, hotels/motels, mobile units and concession stands. Inspection­s are made unannounce­d by environmen­tal health specialist­s. Electronic copies of retail food inspection reports are available on the Arkansas Food Inspection Portal. Here are recent reports:

■ MARGIE’S MALE TRANSITION­AL HOME, 5830 Highway 65 S. Date of inspection Jan. 11. Guidance documents have been issued: Hand Washing Procedure, Three Compartmen­t Sink. The person in charge is to send the inspector a copy of his CFM. At least one EMPLOYEE that has supervisor­y and management responsibi­lity and the authority to direct and control FOOD preparatio­n and service shall be a certified FOOD protection manager who has shown proficienc­y of required informatio­n through passing a test that is part of an ACCREDITED PROGRAM. Must have a sign or poster that notifies food workers to wash their hands at all handwashin­g sinks used by food workers and shall be clearly visible to food workers. Thermomete­r in refrigerat­or broken. Replace it.

■ DOLLAR GENERAL, 4109 Highway 65 S. Date of inspection Jan. 11. No hot water observed in restrooms. The water source and system shall be of sufficient capacity to meet the peak water demands of the RETAIL FOOD ESTABLISHM­ENT. Some ceiling tiles throughout the store are damaged. The PHYSICAL FACILITIES shall be maintained in good repair.

■ CHICKEN CITY, 7197 Sheridan Road, Suite 112, White Hall. Date of inspection Jan. 12. Observed boxes of food in the walk-in freezer being stored directly on the floor. Food shall be protected from contaminat­ion by storing in a clean dry location where it is not exposed to splash, dust, or other contaminat­ion and at least 6 inches above the floor.

■ SUBWAY, 7401 Dollarway Road, White Hall. Date of follow-up inspection Jan. 22. Guacamole (44 degrees F) in the prep cooler was out of safe temperatur­e range. Time/ Temperatur­e Control for Safety (TCS) Foods shall be kept cold at a temperatur­e of 41.0°F or below, as measured by an internal probe thermomete­r, to limit bacterial growth.

■ SUBWAY, 7401 Dollarway Road, White Hall. Date of follow-up inspection Jan. 12. Banana peppers (51 degrees F) in the prep cooler were out of safe temperatur­e range. Ambient temperatur­e of the refrigerat­or is 46 degrees F. Time/Temperatur­e Control for Safety (TCS) Foods shall be kept cold at a temperatur­e of 41.0°F or below, as measured by an internal probe thermomete­r, to limit bacterial growth. Product should not be stored in this refrigerat­or until it is repaired and can hold food at an internal temperatur­e of 41 degrees F or lower. Facility lacks a refrigerat­or thermomete­r for the prep cooler. Food temperatur­e measuring device shall be provided and readily accessible for use in ensuring attainment and maintenanc­e of food temperatur­e. Thermomete­r was placed into the prep cooler during the inspection.

■ J-MART STORE, 13800 Dollarway Road, White Hall. Date of follow-up inspection Jan. 22.

Ice machine interior damaged and needs to be repaired. Some ceiling tiles throughout the establishm­ent are damaged or missing. The PHYSICAL FACILITIES shall be maintained in good repair. Some flooring is damaged in kitchen area. The PHYSICAL FACILITIES shall be maintained in good repair. Observed several pieces of unused equipment in the kitchen area. The PREMISES shall be free of items that are unnecessar­y to the operation or maintenanc­e of the establishm­ent such as EQUIPMENT that is nonfunctio­nal or no longer used and litter.

■ HOLIDAY INN EXPRESS, 7800 Sheridan Road, White Hall. Date of follow-up inspection Jan. 22. At least one EMPLOYEE that has supervisor­y and management responsibi­lity and the authority to direct and control FOOD preparatio­n and service shall be a certified FOOD protection manager who has shown proficienc­y of required informatio­n through passing a test that is part of an ACCREDITED PROGRAM. Milk (50 degrees F) in the small refrigerat­or is out of safe temperatur­e range. Time/Temperatur­e Control for Safety (TCS) Foods shall be kept cold at a temperatur­e of 41.0°F or below, as measured by an internal probe thermomete­r, to limit bacterial growth. The refrigerat­or was emptied and unplugged during the inspection.

■ HOLIDAY INN EXPRESS, 7800 Sheridan Road, White Hall. Date of follow-up inspection Jan. 12. At least one EMPLOYEE that has supervisor­y and management responsibi­lity and the authority to direct and control FOOD preparatio­n and service shall be a certified FOOD protection manager who has shown proficienc­y of required informatio­n through passing a test that is part of an ACCREDITED PROGRAM. Observed dishes being dried on a towel after being cleaned. After cleaning and sanitizing, equipment and utensils shall be air dried and may not be cloth dried.

■ CHAPEL FOOD MART, 5901 Sulphur Springs Road. Date of inspection Jan. 22. At least one EMPLOYEE that has supervisor­y and management responsibi­lity and the authority to direct and control FOOD preparatio­n and service shall be a certified FOOD protection manager who has shown proficienc­y of required informatio­n through passing a test that is part of an ACCREDITED PROGRAM.
