Jefferson County Food & Safety Report
The Arkansas Department of Health regulates the sale of food at establishments that include restaurants, bars, day cares, schools, grocery stores, convenience stores, bed and breakfast facilities, hotels/motels, mobile units and concession stands. Inspections are made unannounced by environmental health specialists. Electronic copies of retail food inspection reports are available on the Arkansas Food Inspection Portal. Here are recent reports:
■ MARGIE’S MALE TRANSITIONAL HOME, 5830 Highway 65 S. Date of inspection Jan. 11. Guidance documents have been issued: Hand Washing Procedure, Three Compartment Sink. The person in charge is to send the inspector a copy of his CFM. At least one EMPLOYEE that has supervisory and management responsibility and the authority to direct and control FOOD preparation and service shall be a certified FOOD protection manager who has shown proficiency of required information through passing a test that is part of an ACCREDITED PROGRAM. Must have a sign or poster that notifies food workers to wash their hands at all handwashing sinks used by food workers and shall be clearly visible to food workers. Thermometer in refrigerator broken. Replace it.
■ DOLLAR GENERAL, 4109 Highway 65 S. Date of inspection Jan. 11. No hot water observed in restrooms. The water source and system shall be of sufficient capacity to meet the peak water demands of the RETAIL FOOD ESTABLISHMENT. Some ceiling tiles throughout the store are damaged. The PHYSICAL FACILITIES shall be maintained in good repair.
■ CHICKEN CITY, 7197 Sheridan Road, Suite 112, White Hall. Date of inspection Jan. 12. Observed boxes of food in the walk-in freezer being stored directly on the floor. Food shall be protected from contamination by storing in a clean dry location where it is not exposed to splash, dust, or other contamination and at least 6 inches above the floor.
■ SUBWAY, 7401 Dollarway Road, White Hall. Date of follow-up inspection Jan. 22. Guacamole (44 degrees F) in the prep cooler was out of safe temperature range. Time/ Temperature Control for Safety (TCS) Foods shall be kept cold at a temperature of 41.0°F or below, as measured by an internal probe thermometer, to limit bacterial growth.
■ SUBWAY, 7401 Dollarway Road, White Hall. Date of follow-up inspection Jan. 12. Banana peppers (51 degrees F) in the prep cooler were out of safe temperature range. Ambient temperature of the refrigerator is 46 degrees F. Time/Temperature Control for Safety (TCS) Foods shall be kept cold at a temperature of 41.0°F or below, as measured by an internal probe thermometer, to limit bacterial growth. Product should not be stored in this refrigerator until it is repaired and can hold food at an internal temperature of 41 degrees F or lower. Facility lacks a refrigerator thermometer for the prep cooler. Food temperature measuring device shall be provided and readily accessible for use in ensuring attainment and maintenance of food temperature. Thermometer was placed into the prep cooler during the inspection.
■ J-MART STORE, 13800 Dollarway Road, White Hall. Date of follow-up inspection Jan. 22.
Ice machine interior damaged and needs to be repaired. Some ceiling tiles throughout the establishment are damaged or missing. The PHYSICAL FACILITIES shall be maintained in good repair. Some flooring is damaged in kitchen area. The PHYSICAL FACILITIES shall be maintained in good repair. Observed several pieces of unused equipment in the kitchen area. The PREMISES shall be free of items that are unnecessary to the operation or maintenance of the establishment such as EQUIPMENT that is nonfunctional or no longer used and litter.
■ HOLIDAY INN EXPRESS, 7800 Sheridan Road, White Hall. Date of follow-up inspection Jan. 22. At least one EMPLOYEE that has supervisory and management responsibility and the authority to direct and control FOOD preparation and service shall be a certified FOOD protection manager who has shown proficiency of required information through passing a test that is part of an ACCREDITED PROGRAM. Milk (50 degrees F) in the small refrigerator is out of safe temperature range. Time/Temperature Control for Safety (TCS) Foods shall be kept cold at a temperature of 41.0°F or below, as measured by an internal probe thermometer, to limit bacterial growth. The refrigerator was emptied and unplugged during the inspection.
■ HOLIDAY INN EXPRESS, 7800 Sheridan Road, White Hall. Date of follow-up inspection Jan. 12. At least one EMPLOYEE that has supervisory and management responsibility and the authority to direct and control FOOD preparation and service shall be a certified FOOD protection manager who has shown proficiency of required information through passing a test that is part of an ACCREDITED PROGRAM. Observed dishes being dried on a towel after being cleaned. After cleaning and sanitizing, equipment and utensils shall be air dried and may not be cloth dried.
■ CHAPEL FOOD MART, 5901 Sulphur Springs Road. Date of inspection Jan. 22. At least one EMPLOYEE that has supervisory and management responsibility and the authority to direct and control FOOD preparation and service shall be a certified FOOD protection manager who has shown proficiency of required information through passing a test that is part of an ACCREDITED PROGRAM.
