Jefferson County Food & Safety Report
The Arkansas Department of Health regulates the sale of food at establishments that include restaurants, bars, day cares, schools, grocery stores, convenience stores, bed and breakfast facilities, hotels/motels, mobile units and concession stands. Inspections are made unannounced by environmental health specialists.

Here are recent reports:
▪ MS DEES DINER, 620 S. Poplar St. Date of inspection April 4. Observed lighting not covered. Lights bulbs shall be shielded, coated or otherwise shatter-resistant in areas where there is exposed food, clean equipment, utensils and linens or unwrapped single-service and single-use articles.
▪ MOM & POPS COUNTRY STORE, 3432 Highway 65 S. Date of inspection April 4. At least one EMPLOYEE that has supervisory and management responsibility and the authority to direct and control FOOD preparation and service shall be a certified FOOD protection manager who has shown proficiency of required information through passing a test that is part of an ACCREDITED PROGRAM. All drinks must have a lid and straw. A closed BEVERAGE container if the container shall be handled to prevent contamination of: (1) The EMPLOYEE’S hands; (2) The container; and (3) Exposed FOOD; clean EQUIPMENT, UTENSILS, and LINENS; and unwrapped SINGLE-SERVICE and SINGLE-USE ARTICLES. Corrected on site. Observed no hand washing sink in establishment. Provide handwash sinks as necessary for convenient use by employees in food preparation and warewashing areas and toilet rooms. Observed wiping clots laying on counter top. Wiping cloths shall be used as intended and in compliance with Regulations pertaining to Retail Food establishment. Observation: Walls are soiled in kitchen area. Corrective Action: Nonfood contact surfaces shall be kept free of an accumulation of dust, dirt, food residue, and other debris. Observation: Restroom door needs a self-closure. Corrective Action: Toilet room doors shall be kept closed except during cleaning and maintenance operations. Observation: The restroom needs a lid on trash can.
▪ LUCY MAE’S SOUTHERN FOODS mobile, 6305 Dollarway Road, White Hall. Date of inspection April 4. Observed raw bacon being stored above potatoes in the refrigerator. Separate raw animal foods during storage, preparation, holding, and display from ready-to-eat food. Raw bacon was moved below the potatoes during the inspection.
▪ BIG BANJO PIZZA PARLOR, 4208 W. 28th Ave. Date of inspection April 8. Observation: Observed salad bar not holding correct temperature 48. Corrective Action: Time/Temperature Control for Safety (TCS) Foods shall be kept cold at a temperature of 41.0°F or below, as measured by an internal probe thermometer, to limit bacterial growth.
▪ UNIQUE CAKES BY MISS MARGARET, 214 W. Barraque St. Date of follow-up inspection April 9. The back refrigerator is not being used to hold time and temperature for safety foods.

Cheese (47 degrees F) and ham (49 degrees F) in the mini refrigerator and cut tomatoes (59 degrees F) in the back refrigerator are out of safe temperature range.
