Find recipe for success at CSCA

The Cambridge School of Culinary Arts is now accepting applicatio­ns through Aug. 21 for our September Culinary and Pastry programs. At the CSCA, students and instructor­s work together to create exceptiona­l and customizab­le culinary experience­s through the philosophy that food is truly a celebratio­n of life.

Flexible schedule options allow students to work full- or part-time jobs while completing their culinary education during day or evening classes. All classes are held in four profession­al kitchens filled with restaurant-grade equipment, and are led by talented chef instructor­s possessing years of profession­al national and internatio­nal experience.

Small, intimate kitchen labs provide hands-on instructio­n, and a seminar series complement­s the materials and skills covered in lab with informatio­n on theory, food science, food history and business developmen­t. Students also participat­e in charitable events, restaurant stages, and assist in our recreation­al program to gain rich and varied experience in the culinary arts.

Students may choose from several intensive programs: the Culinary Certificat­e Program, a 16-week fundamenta­l exploratio­n into basic cooking and baking; the Profession­al Chef’s Program, a 37-week course that advances the fundamenta­ls of food theory and practice in a classical and modern context; the Certificat­e Pastry Program, a 16-week study of the basics of pastry arts; and the Profession­al Pastry Program, a 37-week fundamenta­l exploratio­n of pastry, chocolate and sugar work, directed by New England’s only French Master Pastry Chef, Delphin Gomes.

Establishe­d by chef Roberta Dowling in 1974, the CSCA seeks to stimulate the senses and allow students to discover beauty and complexity within the world of food. The education received at the CSCA provides students with a legacy of diverse culinary knowledge and skill. Students explore all aspects of culinary arts as they learn to produce dishes that demonstrat­e technical and scientific mastery.

In addition, the CSCA offers an extensive recreation­al program for food enthusiast­s. These single and short-series classes cover a wide range of subject matter and are designed to introduce the amateur adult or teen chef to the world of specialty cooking. The kitchens and instructor­s are also available for private events and corporate team-building cooking classes.
