Bacon-wrapped pineapple:

Get big flavor in little bites

As you gear up for concert or football tailgates, consider these one-bite skewers of juicy golden pineapple wrapped in crispy bacon and topped with a spiced brown sugar glaze. They are simple to assemble and cook, and my brother-in-law Greg would even call these summery and smoky nuggets “foopable.” As in, they’re so easy to eat that you pop one after another into your mouth with a foop sound. Foop. Foop. Foop. BACON-WRAPPED PINEAPPLE SKEWERS 1 lb. thinly sliced lean bacon 1 pineapple, cored and cut

into 1-inch pieces 2 T. light brown sugar

A t. cumin 2 pinches to J t. cayenne

pepper 30 to 35 small skewers or

toothpicks

Preheat oven to 425 degrees.

Slice the bacon strips in half to achieve two equal pieces that are each about 4 inches long.

Wrap a piece of bacon around a pineapple chunk and secure it in place by piercing it with a small skewer or toothpick. Set the finished pineapple skewers on a parchment or foil-lined sheet pan.

Once all pineapple and bacon is used and arranged on the sheet pan, mix together the brown sugar, ground cumin and cayenne pepper. Sprinkle this mixture over the tops of the bacon-wrapped pineapple skewers.

Bake until the bacon is crispy, about 20 to 25 minutes, flipping the skewers over halfway through. Allow the skewers to cool for 2 minutes, then carefully transfer them to a platter. Serve warm.
