The Dinner Belle Cheesy Sausage Biscuit Bites

Though my Granny’s biscuits have achieved truly legendary status in my family, my father’s Cheesy Sausage Biscuit Bites are a pretty close second. Prepared in 15 minutes or less, these delicious and bite-sized buttermilk biscuits are the perfect solution for a quick and easy breakfast on-the-go.

My dad has long been the king of breakfast foods, but he took this job especially seriously when I was in high school. In the past I’ve shared his go-to recipe for weekends when I had friends over — those cinnamon rolls are truly the stuff of dreams —but today we’re going to refocus our attention on those weekday mornings when parents are hustling to get kids fed and out the door to school.

In those moments, you need something fast, easy-to-prepare and tasty enough that none of the kids complains about not wanting to eat. For my dad, these biscuit bites were the solution.

He would make them fresh in the mornings and put them inside little sandwich bags so that we could eat them on our way down to the bus stop. They were almost always devoured before we got there but on those rare occasions when we managed to save a few for the ride to school, our friends were always asking for one or two to keep for themselves.

They’re that good.

Want to make your own Cheesy Sausage Biscuit Bites? Here’s what you need:

♦ 3 cups self-rising flour

♦ 1 teaspoon baking powder

♦ ¼ cup shortening

♦ 1 16-ounce package breakfast sausage, browned and drained

♦ 1 cup shredded cheddar cheese

♦ ¾ cup buttermilk

♦ ½ teaspoon hot sauce

Here’s how to make them:

1. Preheat your oven to 475º F. Whisk flour and baking powder together in a large mixing bowl. Using a pastry blender or fork, cut the shortening into the flour mixture until it has the sandy texture of smooth crumbs.

2. Stir in cooked and drained sausage, cheddar cheese, buttermilk and hot sauce until well combined. There should be no dry flour left behind in the mixture. It should resemble a thick biscuit or cookie dough.

3. Scoop the biscuit bites onto a parchment-lined baking sheet using a tablespoon or cookie scoop. Place the baking sheet into the oven and bake until cooked through and lightly browned, about 10 minutes. Remove from the oven and serve.

Recipe makes 24 biscuit bites.
