Police chief appointed to housing authority

♦ The city also approved two rezoning requests and a beer package license request.

It was a mixed bag for the Calhoun City Council during their regularly scheduled meeting Monday night at the Depot, 109 S. King St.

Among the items on this week’s agenda was the appointmen­t of someone to fill a seat on the Calhoun Housing Authority vacated by the death of Wilburn Aker, whose term was set to end Aug. 26, 2022.

Recommende­d to fill the unexpired term was current Calhoun Police Chief Tony Pyle, who agreed to serve if appointed. Pyle’s appointmen­t was passed unanimousl­y by the council. Mayor Jimmy Palmer noted the council’s appreciati­on for Aker’s years of service to the community.

Pyle has served as chief of the

Calhoun Police Department since being appointed by the council in April of 2018 when he replaced Garry Moss upon his retirement.

Also passed Monday night were two zoning change requests, one for less than a half acre on 109 Pine Hill Drive to be changed from county to city, and a 0.59 acre parcel at 104 Henderson Bend Road to be changed from residentia­l to commercial.

Also approved was a beer package license request for A1 Grocery LLC, 125 Red Bud Road.

City Administra­tor Paul Worley submitted the Fiscal Year 2020 financial audit for approval, stating the report came back clean.

A proposal was also made concerning changes to the city’s financial policies and procedures manual to ensure employees stay

All motions were passed Monday night unanimousl­y and without any added discussion from the council or members of the public.

Worley also offered a report on the city’s general fund, which he said added $1.3 million during 2020 and the city remains at only 20% of its legal debt level.

“Top to bottom, we’re very pleased,” Worley said, adding that every city fund has at least a three month operationa­l reserve, which hasn’t been the case for some time.

The next scheduled meeting of the Calhoun City Council is for Monday, Feb. 22, at 7 p.m., also at the Depot, 109 S. King St.

The titles just keep on coming for the Sonoravill­e Firebirds.

Sonoravill­e racked up eight individual area champs and had 12 total wrestlers punch their ticket to State on Saturday en route to winning their fourth straight Area Traditiona­ls crown, this time the Area 6-AAA championsh­ip on their home mats at The Furnace.

Sonoravill­e dominated the team standings to earn the area title, finishing with 196 total points ahead of Coahulla Creek (134), LaFayette (125), Ringgold (102) and LFO (32).

Leading the Firebirds with undefeated runs to individual area titles were Logan Moore at 126 pounds, Eli Knight (132), Davin O’Neal (145), Colt Weaver (160), Gavin Harper (182), Jebb Knight (195), Draven Peppers (220) and Jaxx Knight (285).

Also having impressive area tournament­s to earn runner-up honors in their respective weight classes were Cole Godfrey (138) and Zac McAfee (170). Finishing in third place to earn a Class AAA State berth as well were Wade Parker (113) and Trent Bohannon (152).

Also contributi­ng to the team point total was Thomas Young with a fourthplac­e finish at 106 pounds.

At the 7-AAAAA Area Traditiona­ls at Cass High, the Calhoun Yellow Jackets also had a solid weekend, qualifying five wrestlers for the Class AAAAA State Traditiona­ls led by one individual area champion. Isaac Green had the top finish for the Jackets, taking first-place in the 145-pound class.

Calhoun had two wrestlers earn runner-up finishes in their weight classes, including Armando Monroy (113) and Jason Vicente (195). Rounding out the State qualifiers for the Jackets were Hayden Dickenson (106) and Haydin Harris (182).

Contributi­ng to the team point total of 99 that put the Jackets fourth at the end of the day was Brody Parker (4th, 120), Dillon Harris (4th, 132), Chandler Serritt (4th, 160), Kendrick Kirby (4th, 285) and Chris Ellis who earned two points at 220 pounds.

Gordon Central also placed fourth

in the team standings with 83 points at the Area 7-AA Traditiona­ls at Chattooga High. The Warriors were led by individual area champ Shane Davis at 126 pounds.

Dakota Jones earned a runner-up finish at 285 pounds, and Patrick Solorio also clinched a Class AA State berth by placing third at 220. Contributi­ng to the team point total were Derek Garnham (4th, 106), Dylan Garnham (4th, 113), Aiddyn Bennett (4th, 145), Deondre McIntosh (4th, 152), Jose Cardoza (4th, 170) and Isaac Campuzano (4th, 182).

Next up for the wrestlers that qualified will be the GHSA State Traditiona­ls Tournament at the Macon Centreplex this week. The Class AA State Traditiona­ls get underway on Tuesday for Gordon Central, and the Class AAA State Traditiona­ls open on Wednesday for Sonoravill­e. Calhoun wrestlers will compete in the Class AAAAA State Traditiona­ls starting on Friday. Finals for Class AA will be Wednesday, while Class AAA on Thursday and Class AAAAA on Saturday.

Dutch babies are the older, more sophistica­ted cousins of every day breakfast pancakes. Sometimes called a Bismarck or Hootenanny, Dutch babies are a thicker and baked in the oven instead of on the stovetop — and like regular, old fashioned pancakes, these little guys are even tastier when paired with a topping. Today I’m sharing my recipe for my very favorite fruit topping with you, and trust me, this lemon curd is totally worth the hype. Cool, smooth and creamy with just the right about of tart sweetness, my homemade lemon curd pairs perfectly with just about anything, from toast to scones, but is at its best paired with the fluffy, cakey goodness of a Dutch baby. Best of all, it takes only 10 minutes to prepare from start to finish with just four simple ingredient­s that most of us have in our refrigerat­ors year round: eggs, sugar, butter and a few lemons.

The Dutch babies themselves take 20 minutes to prepare and only takes 10 ingredient­s, so all around, it’s a 30 minute breakfast that would make Rachael Ray proud.

Want to make your own Dutch Babies with Homemade Lemon Curd?

Here’s what you need:

For the Dutch babies:

♦ 2 tablespoon­s butter

♦ 3 eggs

♦ 1/2 cup milk

♦ 1/2 cup all-purpose flour

♦ 2 tablespoon­s sugar

♦ 1/4 teaspoon salt

For the lemon curd:

♦ 4 lemons, juice and zest

♦ 1/2 cup sugar

♦ 4 large eggs

♦ 6 tablespoon­s unsalted butter

Here’s how you make it:

Start by preparing the curd. Heat all the ingredient­s in a bowl over a sauce pan of simmering water for about 10 minutes. You will know it is ready to come off the heat when it has thickened and seems creamy, rather than liquid. Do not cook the curd directly in the pan! I know it’s tempting to cut down on dish duty, but the egg is significan­tly more likely to overcook and ruin the texture of the curd that way.

Once the curd is ready, put it into the refrigerat­or to chill and preheat your oven to 425°F. Then, place the two tablespoon­s of butter in a oven safe skillet and put it in the oven to melt. Remove the melted butter from the oven before it burns or starts to smoke.

Pour the mixture of eggs, milk, flour, salt and sugar into the skillet on top of the butter, then return the mixture to the oven to bake until fluffy and golden brown, about 20 minutes. Allow to cool. Do not be alarmed if the Dutch baby appears to ‘shrink’ during the cooling phase. It is simply settling and will still taste delicious!

Fill with lemon curd and any other added toppings. Serve warm.
