Why we love it:

Avocados aren’t just for guacamole dip anymore. Their buttery texture and flavor find them turning up in everything from smoothies and salads and even brownies. They can be pureed and tossed with pasta, substituted for butter or oil in your favorite baked good recipes, spread or sliced onto sandwiches and wraps or chopped to top soups and add to salsas.

Besides being delicious, this pear-shaped berry (yes, it actually is a fruit) can be added to the list of super foods – those foods offering nutritional perks and health benefits. Avocados: • Offer an array of vitamins and minerals not often found together in one food, including vitamins A,C, E, K and the

B-vitamins (folate, niacin, riboflavin, thiamine, pyridoxine and pantothenic acid) plus several minerals (potassium, magnesium, manganese, copper, iron, zinc and phosphorous). • Are one of the best sources of the carotenoids lutein and zeaxanthin - antioxidants important for eye health.

• Are low in sugar, sodium and saturated fat.

• Contain fiber (both the soluble and insoluble kinds).

• Are high in monounsaturated fat, which is a “good fat” that helps 1) lower bad cholesterol and 2) improve

absorption of the fat-soluble vitamins (A,D, E and K) and antioxidants like carotenoids.
