71 Subway 108 N. Main St. in La Fayette; reasons included an overall lack of knowledge about employee health-reporting requirements, temperature control, and food safety procedure. Inspectors said they will follow up with staff to be sure training has taken place. Inspectors also observed several instances of staff changing gloves without washing hands; potentially hazardous cold food held at greater than 41 degrees Fahrenheit. Various sliced deli meats, cheese and veggies above 41 degrees due to the lids staying off of the products all day. Raw fruits and vegetables not washed prior to preparation and whole tomatoes not being washed prior to slicing.
80 Aubrey’s 496 Northgate Mall Drive; reasons included bartender was eating from a plate behind bar near beer taps. Two employees were handling readyto-eat foods bare-handed. No paper towels were at hand washing sink by high-heat dishwasher. High-heat dishwasher was at 133-150 degrees Fahrenheit. Ingredients in large white bins were not properly labeled. Numerous foods in cold holding were left uncovered. Raw beef was unwrapped and stored touching drawer bottom pan. Personal drink was stored next to other foods in reach-in cooler.
82 China Moon 5600 Brainerd Road; reasons included crab Rangoon, fried fish and egg cakes all below 135 degrees. Need to add water to section of case that was below 135. Food in reach-in cooler and cold-prep case all above 41 degrees. Some food was discarded, some moved to walk-in. Coolers not holding food below 41 degrees. Kitchen floors were in bad repair and holding standing water debris. Ceiling tiles stained.
