SMOKY BRISKET BURGERS
Serves 6
1 lb. ground brisket
1 lb. ground chuck
1⁄2 cup honey chipotle barbecue sauce, plus more for serving
2 tbsp. Dijon mustard
2 tsp. smoked paprika
2 tsp. hickorysmoked salt
6 Kaiser rolls
6 slices tomato
6 slices smoked Gouda cheese 6 slices white onion
1⁄2 cup sliced mushrooms
6 lettuce leaves
6 slices crisply cooked bacon
1. Heat grill for medium-high direct cooking. In bowl, combine ground brisket, ground chuck, barbecue sauce, mustard, paprika and salt; lightly mix. Shape into 6 large 1"-thick patties.
2. Brush cut sides of buns with olive oil. Grill buns, cut side down, 30 sec. Set aside.
3. Grill burgers 4 to 5 min. per side for medium or to desired doneness. Layer toasted buns with burgers, tomato, cheese, onion, mushrooms, lettuce, bacon and extra barbecue sauce as desired.
