Farming of U.s.-grown flavor hops varieties has exploded over the past few years, mirroring the rise of craft beer over the same time period. Today’s creative brewers, enamored with the range of flavors these hops impart, have begun using them by the truckload. But 2016 was the first year in recent history where the Cascade variety dropped, proving that nothing lasts forever (and flavor preference­s are changing). Citra and Mosaic, however, show no sign of stopping any time soon. Here, we’ve charted the number of pounds grown per variety for the past seven years.
