“We start with a tra­di­tional Ger­man he­feweizen recipe, us­ing 50% wheat malt and 50% Pil­sner malt. A whirlpool hops ad­di­tion lends a very re­fresh­ing cit­rus note. We use an Amer­i­canGer­man hy­brid yeast strain.”

What our panel thought

Aroma: “Wheat malt aroma ap­par­ent right up front, ac­com­pa­nied by grains of par­adise, as well as tart and raw grain. Low clove and other phe­nol spices, with es­ters of ba­nana, stone fruit, hon­ey­dew melon, pear, and plum. Some le­mon cit­rus, too.” Fla­vor: “Spici­ness hits up front, with a soft bready wheat malt fla­vor. Grainy, like por­ridge, but with raw, tart wheat. Black pep­per and clove phe­nols but not much hops fla­vor, aside from a hint of le­mon, which feels out of bal­ance. Es­ters of melon and cherry. The fin­ish is quick with some wheat and clove.” Over­all: “An in­ter­est­ing in­ter­pre­ta­tion of the style that’s re­fresh­ing and lively. Nice chewy wheat fla­vor with sub­dued sweet­ness that bal­ances nicely with the bit­ter­ness and spici­ness. A lit­tle low on the ba­nana, though. The yeast con­tri­bu­tion is low, with low es­ters and phe­nols.”
