No Kale? Try These Greens

If kale isn’t available where you are, there are some other stalwart greens you can substitute in this salad. Try Swiss chard, collard greens or mustard greens, but be warned: Mustard greens have a peppery bite! (These can all be dressed ahead of serving time.) Spinach can also be used, but it won’t hold up against dressing for very long, so if you use spinach leaves, serve the salad immediately after dressing it.
