To Prepare Ahead of Time
To make this ahead of a passage (or if you’re out of produce), use the following substitutions: For fresh zucchini and green pepper, 11/2 cups dehydrated vegetables. For onion, 2 tablespoons dry onion. Garlic, 1/2 teaspoon garlic powder. Ginger root, 1 tablespoon ginger powder. Serrano pepper,
1/4 teaspoon cayenne pepper. Mix all dry ingredients from above recipe in a plastic bag; store. When ready to cook, pour a splash of veggie oil plus dry ingredients in a pot. Add canned ingredients plus about 3 1/3 cups water. Stir. Simmer until lentils are cooked, 30 to 45 minutes. Serves four.
