To make this ahead of a pas­sage (or if you’re out of pro­duce), use the fol­low­ing sub­sti­tu­tions: For fresh zuc­chini and green pepper, 11/2 cups de­hy­drated veg­eta­bles. For onion, 2 ta­ble­spoons dry onion. Gar­lic, 1/2 tea­spoon gar­lic pow­der. Gin­ger root, 1 ta­ble­spoon gin­ger pow­der. Ser­rano pepper,

1/4 tea­spoon cayenne pepper. Mix all dry in­gre­di­ents from above recipe in a plas­tic bag; store. When ready to cook, pour a splash of veg­gie oil plus dry in­gre­di­ents in a pot. Add canned in­gre­di­ents plus about 3 1/3 cups wa­ter. Stir. Sim­mer un­til lentils are cooked, 30 to 45 min­utes. Serves four.
