CHOP EASE

When chopping dried fruit, I've got an easy way to keep the knife blade clean — freeze the fruit. Spread the fruit on a tray and let it hang out in the freezer until firm. This works especially well for dried apricots and prunes. (Exception: frozen dried dates need to sit out on the counter for a few minutes for an easier chop.)
