Gratitude & cinnamon rolls!

It is so good to know you are appreciate­d! Last week, I greeted a Chief reader who came into renew her subscripti­on.

She greeted me by saying, “I look forward to receiving my Chief each week!”

As we talked, somehow our conversati­on turned to baking and my baking of cinnamon rolls! I would say I was a failure at making rolls until I ran along this recipe. I did not want to take the time to knead and wait to raise! Now I look forward to sending out text messages to my family on the weekends I bake, letting them know I am baking and that I have a plate for them, they just need to see me to pick it up.

I also enjoy hearing of someone who is celebratin­g or having a tough day, then I enjoy sharing a plate with them. Most of the time I do a double batch! I have never been able to freeze rolls and have them taste fresh when I pull them out. Well for me, this recipe, allows me to do that. I also wait to frost them until I pull them out of the freezer. I also feel one extra ingredient I add to the frosting sets the rolls apart!

Also, each weekend, Chip and I can have a treat of a fresh baked roll, without the mess in the kitchen! I pull two out of the freezer, put them in the oven at 200 for about 30 minutes … you can guess the rest!

The reader asked if I would share the recipe, I will give credit to Pioneer Woman, Ree Drummond, I will also have to say I have modified it a bit. I use less sugar, my preference, and the other just that I can’t read my handwritin­g because usually I just get my book and hand write the recipes from the TV shows so I don’t have to go to a website. So, here goes sharing the recipe. I will fill you in where I have changed it!

4 cups milk warm

Add 1 cup sugar (recipe calls for 2), 1 cup vegetable oil, proof 2 pkg. of yeast, then stir in 8 cups of flour (yes and you only stir a bit).

Let sit for 1 hour, then add 1 cup of flour along with 1 tablespoon each of baking powder, baking soda, and salt. (Here is where I messed up, the original recipe calls for 1 teaspoon. I will have to say I think they turn out really good adding the tablespoon!) Stir that in, yes only stir.

Cover with plastic wrap and sit in the fridge over night! (how easy is that!)

In the morning pull out the dough, roll it out, put on however much cinnamon and sugar with melted butter you want and pop in the over at 375 for about 20 minutes. There is no letting rise, no extra time waiting.

Now when it comes to the frosting, I am a dumping sort of baker - a bowl with powder sugar, (it might be 2-3 cups, melted butter, vanilla, cream and coffee, usually equal parts but when I need more liquid, I add coffee!

So, there you have it, my roll recipe. I hope those who I am able to share rolls with know that I appreciate them!
