Yellow Springs Greene Canteen cafe planned

The founder of a locally owned gourmet pretzel company is gearing up to open a cafe-style restaurant that will focus on “clean foods” such as salads, juices and smoothies, along with a sandwich menu and baked goods.

The build-out of “The Greene Canteen” is underway with plans to open by spring of 2019 at 134 Dayton St. in Yellow Springs, according to Brittany Baum, the cafe’s founder and owner.

“I felt that there is a need for clean foods and drinks in Yellow Springs,” Baum told this news outlet. “The location is nice because it’s in the heart of Yellow Springs and near the bike path.”

The Greene Canteen will offer grab-and-go selections that will include vegetarian and vegan options.

“We’ll probably start small and expand hours once we get our feet under ourselves,” Baum said.

Baum is also the founder of Brezel, a Bavarian pretzel company with locations in Columbus and Cincinnati.

“Brezel is a gourmet pretzel company specializi­ng in handrolled Bavarian-style pretzels . ... Our menu is always evolving to embrace new, creative pairings while preserving old favorites,” Baum said. “We aim to provide high-quality, unique pretzel products made with fresh ingredient­s in a fun and friendly setting.”

Pretzels will be among the baked goods available at Greene Canteen, Baum said.
