Once homeless, woman opens restaurant

Woman works through culinary training, opens restaurant.

Five years ago, Brooke Coleman was homeless. Now she has opened Stuffed Enuff on N. Dixie Drive in HarrisonTw­p.

Five years ago, Brooke Coleman was a homeless and pregnant single mother who was staying in a homeless shelter.

“I was going through a struggle,” Coleman said. “One night I looked at my family and decided I was never going to be in that situation again. I knew if I worked

hard, I would never have to go back to that shelter.”

After attending Sinclair Community College and obtaining training in the college’s culinary arts program, Coleman started a small catering operation as “Chef B” — and now, she has launched her own restaurant.

“Stuffed Enuff ” opened last week at 2901 N. Dixie Drive in Harrison Twp., just north of the Keowee Street bridge, in a space that previously housed the “Kula!Kula!” eatery. The

new restaurant opens every day at 8 a.m., and on Fridays and

Saturdays, it stays open until 3:30 a.m. to serve the late-night crowd.

Most items on the menu are available stuffed with a variety of ingredient­s, leading to nearly infinite possibilit­ies. Breakfast sandwiches, for example, are served on a choice of “breakfast bun” of waffles, pancakes or French toast. Meat selections are pork sausage, turkey sausage, chicken breast or steak. Additional stuffing options include onion, green pepper, jalapeno pepper, banana pepper, mushrooms,

bacon, spinach, eggs, tomatoes, hash browns or pineapple.

Stuffed burgers also are available, as are stuffed rolls, which can be made with salmon, shrimp, steak or chicken, with a choice of cheeses: American, Swiss, Pepperjack or cheddar.

Stuffed Enuff also offers wings, with a choice of eight sauces, from Sweet Asian to Nashville Hot.

The new restaurant hosts a special “Soul Food Sunday” menu available for take-out or in an all-you-can-eat buffet every Sunday.

“I knew I wanted to do something different from what any other restaurant was doing,” Coleman said.
