WARREN COUNTY HEALTH INSPECTION­S

The following are summaries of the state of Ohio standard inspection reports on file from the Warren County Combined Health District, from the weeks of Oct. 10-21. District informatio­n is available online at www.wcchd. com.

Super Subby’s

276 W. Central Ave., Springboro Date of inspection: Oct. 12

Violations: Corrected during inspection. PIC unable to demonstrat­e knowledge of temperatur­es and times for safe refrigerat­ed food storage, hot holding, cooling and reheating. Discussed proper procedures.

Observed vape pen and phone on prep counter that deli meats are sliced on. Please keep all personal items in a designated area at all times. Personal items moved.

Corrected during inspection. Employee eating, drinking or using tobacco in non-designated area. Observed half-eaten sandwich next to sliced deli meats on prep table by slicer. Please eat and keep all foods in designated areas at all times. Sandwich moved.

Observed chili beef thawing in warm water, with temperatur­e at 51. Please monitor thawing and only thaw over running water, when cooked, or in cooler units. Notified PIC to cook/ utilize the beef ASAP.

Lebanon Brewing Company

20 W. Silver St., Lebanon Date of inspection: Oct. 12

Violations: Corrected during inspection. TCS foods not being hot held at the proper temperatur­e. Steam wells were holding TCS foods at 110 degrees Fahrenheit. Water was added to the bain-marie so heat would be properly conducted into the hotel pans.

Corrected during inspection. TCS foods not being cold held at the proper temperatur­e. The griddle cooler and prep cooler were holding TCS foods at 50 and 46 degrees respective­ly. To prevent the growth of bacteria, ensure that the cooler are properly holding TCS foods at 41 degrees or lower. Prep cooler were adjusted to bring the temperatur­e below 41 degrees.

Corrected during inspection. In-use utensils improperly stored. Utensils were being stored in a container of water at room temperatur­e. To reduce the likelihood of contaminat­ion, ensure that utensils are stored in a manner that is approved in food code.

Floor and wall junctures not properly coved or closed and/or floor drains not provided. The walls of the janitors closet with the mop sink are not properly sealed to the floor. To prevent the accumulati­on of water and potential damage to the facility, ensure that the walls are properly coved or sealed so that water may not intrude into the structure.

Hillspring of Springboro

325 E. Central Ave., Springboro Date of inspection: Oct. 11 Violations: Corrected during inspection. TCS foods not being cold held at the proper temperatur­e. Reach-in fridge had internal food temperatur­e of 50F. PIC moved all TCS food to working fridge.

Corrected during inspection — improper storage of poisonous or toxic materials. Sanitizer bucket was being held next to single-use items and food equipment. PIC moved sanitizer bucket to appropriat­e location.

Comments: Facility was clean at time of inspection.

Mechanical ware washing uses heat treatment in addition to a bleach sanitizer rinse aid: Heat treating was 160F and above, but bleach sanitizer was not priming through. PIC stated there is a new dish machine coming in the near future. Bleach sanitizer is just an added measure.
