GREENE COUNTY HEALTH INSPECTION­S

The following are summaries of the state of Ohio standard inspection reports on file from the Greene County Combined Health District, from the week Oct. 3-7. District informatio­n is available online at www.yourfoodsa­fety.com/ greene/.

Calypso Grill

1535 Xenia Road, Yellow Springs

Date of inspection: Oct. 4 Violations: No level 2 certificat­e found. Provide to cpropes@gcph.info.

Found a screw cap drink on prep surface. Keep all drinks with a lid and straw and store away from food.

Observed an employee touch floor, return from outside then begin to handle food. Asked employee to wash hands to prevent contaminat­ion.

Observed the cook handle the cooked plantains with

his bare hands. Use barrier gloves, tongs to handle readyto-eat food. Food discarded to prevent potential illness.

Steak in small container in the small make table had an unpleasant smell. PIC discarded.

Concentrat­ion of quat was initially too low for dish sanitizati­on. PIC added more and tested for 200 ppm.

Found bins containing implements with food debris. Wash, rinse and sanitize all. PIC aware.

Found cut tomatoes not date marked. Date mark by 24 hours with date cut and discard by day seven to prevent potential listeria illness.

White shelves in the tall True freezer reach in have debris — clean.

Peeling paint and wall above the grill. Repair. Replace the broken and missing light shields.

More cleaning is needed of the floors beneath equipment.

Comments: Correct all violations by the next standard inspection and maintain all correction­s made today.

PIC was verbally informed of violations noted during inspection. All signatures on the inspection report have been digitally signed and agreed upon by the PIC and inspector. Inspection report will be emailed to PIC.

Cassano’s Pizza King

1191 E. Dayton-Yellow Springs Road, Fairborn

Date of inspection: Oct. 4 Violations: Parmesan cheese was out at room temperatur­e. PIC replaced in reach-in cooler to hold.

Found open sliced lunch meats not date marked. Date mark when package is open and discard on the seventh day to prevent Listeria illness.

Found one spray bottle not labeled with contents. PIC labeled to prevent contaminat­ion.

Found chemicals hanging on sink splash guards and near food-contact surfaces. All moved to prevent contaminat­ion.

Several shakers not labeled. Label to prevent misuse.

Interior of stove needs more cleaning. Wipe seals of dough lowboy to remove food debris.

Floors in walk-in freezer need cleaned. Ceiling vent needs cleaned in the walk-in.

Comments: PIC was verbally informed of violations noted during inspection. All signatures on the inspection report have been digitally signed and agreed upon by the PIC and inspector. Inspection report will be emailed to PIC.

Correct all violations and maintain all corrected violations up to and through the next standard inspection.
