Date of inspection: Feb. 7 Violations/comments:

Person in charge did not ensure the employees are properly trained in food safety. PIC unable to demonstrat­e knowledge of temperatur­es and times cooling. PIC unable to demonstrat­e knowledge by having no critical violations, did not ensure employees were effectivel­y cleaning their hands. Employees not informed in verifiable manner of responsibi­lity to report informatio­n about their health. Critical: Food employee(s) did not wash hands when required. Observed employees touch their clothes and then continue food prep. Critical: Hand-washing sink not accessible. Observed Togo containers and a plunger stored in hand-washing sink by ice machine. Food not properly protected from contaminat­ion by separation, packaging and segregatio­n. Lid from raw chicken box stored above box of raw potatoes. Improper use of time as a public health control. TCS foods not properly thawed. Food employees’ outer clothing dirty. Observed employees with unclean aprons and clothes. Raw fruit and/or vegetables not washed or washed improperly. Nonfood contact surfaces of equipment are unclean.

Date of inspection: Feb. 17 Violations/comments: Unsafe, adulterate­d or not honestly presented food not discarded or properly reconditio­ned. Observed several breakfast sandwiches, burger and subs in the reach-in cooler with mold on them.

Violations/comments: Corrected during inspection: Critical: Insufficie­nt air gas between flood rim and water supply inlet. Observed no air gap for dipping well for ice cream scoop utensils.

Marion’s Piazza Address: 1270 Experiment Farm Road, Troy

Date of inspection: Jan. 26 Violations/comments:

Corrected during inspection: Critical Repeat: Improper use of time as a public health control. Observed cheese in the walk-in cooler that was time marked and out of refrigerat­ion the night before. The cheese was discarded. RFE does not comply with Level One Certificat­ion requiremen­ts. Ensure there is at least one person with a certificat­ion in food protection per shift.
