MONTGOMERY COUNTY HEALTH INSPECTIONS

Violations: Observed left side of drive-thru side make table to be holding guacamole at 50F, mayo at 48F. etc. PIC discarded of product and replace product on ice baths. PIC also called to get make table serviced.
Observed cut tomatoes on dining side make table that employee stated was made a couple days ago without proper date marking. PIC had tomatoes discarded.
Observed flying pest around hand-washing sink closest to front. PIC had trash cans removed from the area and stated the area would be cleaned.
Comments: Discussed with PIC to ensure sanitizer buckets are properly labeled with common name.
■ Discussed with PIC about chili cooling and reheating procedures.
■ Discussed areas that need cleaned more frequently with PIC Cassano’s Pizza & Subs 6821 Miller Lane, Dayton Date of inspection: Feb. 1
Violations: Person in charge not knowledgeable in how often the pizza slicer should be cleaned or replaced with a clean slicer.
Sanitizer auto dispenser is not dispensing an adequate concentration on sanitizer solution. Repair. Operation will manually make all sanitizer solutions until repairs are complete.
Sanitizer test kit was observed but is not being used to verify concentration at three-comp sink.
Buildup observed on multiple drink station dispenser nozzles and on the can opener blade.
Buildup observed on the surfaces of equipment on the make line. Clean.
Multiple chemical bottles stored above or near food/ food-contact surfaces. Relocated to safe storage area.
Comments: Ensure any staff in place as a person-incharge has obtained Level 1 Food Safety Training.

Comments: This is a re-inspection from the routine inspection conducted on 02/01/2023. The following violations were observed corrected:
■ Auto dispenser for sanitizer solution at the three-compartment sink is in good repair (200ppm quaternary ammonia observed dispensed)
■ Sanitizer test kit available for use and observed used properly by GM
■ Make line appears to be cleaner than the previous inspection
■ Can opener blade observed clean
Clean pop dispenser nozzles daily to help prevent the occurrence of buildup City Barbeque 6549 Miller Lane, Dayton Date of inspection:
Feb. 1
Violations: Smartpower Sink & Surface sanitizer concentration 0ppm. Smartpower container replaced. Adequate concentration achieved.
Observed food bits on the fry slicer. Observed food residue on the can opener blade. Both components were disassembled and cleaned.
A toilet room used by females shall be provided with a covered receptacle for sanitary napkins.
No covered trash receptacles in either unisex restroom. This is a repeat violation from the previous routine inspection.
Comments: Operation awaiting a new fry hot-holding unit — current unit broken.
Monitor storage cabinets underneath dining room condiment/drink area for routine cleaning needs.
Will verify covered receptacle are within restrooms at the next routine inspection.
