Address: 556 N. Adams St., Troy Date of inspection: March 11 Violations//comments: Corrected during inspection, Critical, Quaternary ammonium sanitizer solution at 400 ppm. Upon informing person in charge, sanitizer diluted to around 200 ppm.

Cassano’s

Address: 1201 Experiment Farm Road, Troy Date of inspection: March 6 Violations/comments: PC unable to demonstrat­e knowledge of cleaning and sanitizing. Person in charge unable to state how to test sanitizer concentrat­ion. Demonstrat­ed how to properly test sanitizer. Repeat: Non=food surfaces of equipment are unclean. Observed a build up of food debris at the bottom of reach in coolers and in gaskets. Non-food contact surfaces not easily cleanable. Observed tape on soap dispenser near hand sink and a broken handle on prep cooler. Repeat: physical facilities not maintained in good repair.

Address: 151 W. Staunton Road, Troy Date of inspection: March 11 Violations/comments: Repeat: Non-food contact surfaces of equipment are unclean. Observed a build up of dust on the fan near the dish machine.

Address: 1749 W. Main St., Troy Date of inspection: March 11 Violations/comments: Repeat: Non-food contact surfaces of equipment are unclean. Observed a build up of food and grease debris on the sides of equipment throughout the facility. Repeat: physical facilities not maintained in good repair. Inadequate amount of grout observed throughout the kitchen. Repeat: Facility not maintained clean.
